For some of our clients we will need to create invoices in Greek, based on another template, although the default language is English. Could you please advise how we can do that?

You can specify what invoice template should be used by XTRF for a given client. See below screen shot:
The default template will try to pull all localizable terms in Greek, yet the communication language with the client may remain English.
