Set the Spanish Template as Default

We would like to set the Spanish localized template as default, so that the attached PDFs (POs, quotes, invoices…) are also in Spanish. We can change this in the default email body but not the attached PDF files. Where can we make those changes?

Perhaps you have found a solution by now, but document templates can be set as default.
You need to have admin rights to do that.
1. Go to Configuration > Templates:
2. After clicking on the pen icon, check Default:
3. And Save.
